Read moreHonestly I've wanted to make beet jam for years but always afraid it wouldn't sell but when farmer Sama of Reyhan Farm gave me some beautiful beets she had grown, I knew it's my sign to give it a shot. Boysenberries are super tart and the natural sweetness of the beets worked so well to balance the flavor as well as giving it a nice velvety texture.
Vegetable jams might sound niche and strange and you might be thinking she's out of ideas so she's trying to jam anything now. But I'll have you know that in the old world, especially the Eastern Mediterranean, Caucasus, and Western Asia vegetable jams reign supreme: in fact carrot jam is one of Iranians absolute favorite jam, Cretan tomato jams of Greece, as well as parsnip, beet, eggplant, and cucumber jams are highly coveted.
