The olallieberry, a storied West Coast hybrid of loganberry and youngberry, is prized for its vivid, wine-dark color and a flavor that walks the line between lush sweetness and bright, brambly tartness. Juicy, complex, and intensely aromatic, it’s a berry that tastes like summer at its peak, with just enough acidity to keep things lively.

Here, that vibrant fruit is cooked down in small batches, allowing its natural character to shine. Then comes nocino: a traditional Italian liqueur made from green walnuts, known for its deep, resinous warmth with notes of spice, citrus peel, and soft bitterness that echo amaro. Folded into the jam, it adds a quiet depth and structure, turning a familiar berry preserve into something altogether more layered and unexpected.

The result is a richly textured jam with a dark, jammy sweetness balanced by subtle tannins and a lingering, aromatic finish. It’s as at home on buttered toast as it is paired with aged cheeses, spooned over yogurt, or tucked into a crostata.
